Thai curries might be one of my favorite quick meals to pull together. While one can make their own curry paste, I find the pre-made Thai Kitchen curry pastes to be pretty good. When making a bowl of curry I will usually add some extra Thai peppers and ginger to the pan, but for a quick, weeknight meal like this salmon, I keep the extra flavors minimal. This is about being quick and easy after all!
If you haven’t baked in parchment before, it might look at first glance to be complicated, but that couldn’t be further from the truth. Simply make up your packets of meat, add some sort of liquid and seasoning, crimp the edges, and bake! The crimping is simply folding edges of paper over on top of each other to hold. Or in my case, not so much folding as cramming paper together quickly and hoping it holds (it always does, knock on wood!). (more…)

In honor of Bastille Day, I thought I would share one of my new favorite summer salads, Salad Niçoise. I had been pretty hung up on creating this salad as soon as my green beans started coming in. Of course, by the time they were ready to be picked, the summer heat had become somewhat unbearable, and the last thing I wanted to do was slave over a hot stove inside the house. So instead, I decided to grill most of my Niçoise components, including the salmon, which is not the traditional fish for Niçoise, but given its freshness, was probably much more delicious than tuna ever thought of being. Upon receiving my bounty of salmon last week, I knew just what I wanted to make with it. Earlier in the week I had picked up a copy of Saveur magazine on a whim. It promised delightful Corsican foods and bread recipes that I could make. Buried deep inside the issue, though, was a gem of an article on Senegal feasts, with recipes ranging from fritters and stews to magnificent salads. Upon seeing these salads I headed right back out to the store, picking up the ingredients and making them that evening. (more…)

Earlier this week, while persuing the Kitchn, I stumbled upon this recipe for Kale and Ricotta Salata Salad. I must have been craving greens that day, because immediately upon seeing the picture, the first thought to cross my mind was “MUST MAKE!!!” (you can also insert a drooly face here). So I popped over to Kim Severson’s site to get the recipe, and off to the store I went to procure the ingredients. (more…)
