This is one of my go-to weeknight meals, and it is a great way to use up any random vegetables you may have left over. Growing up, my mom always dressed up marinara in a jar by sauteing some onions and beef (along with some other spices and peppers and such on occasion) before adding the marinara. I changed that up a bit, decided to forgo the beef and just use every veggie I had on hand. Everything is fair play – carrots, squash, zucchini, spinach, broccoli, fresh tomatoes, kale, peppers – you name it, I’ve tossed it in my drug-through-the-garden spaghetti. As the weather cools down, I’m starting to crave comfort foods. Chili, beef bourguignon, and especially spaghetti with meatballs. Queue up the Godfather, because this is a recipe I’ll be making again soon.
One of my favorite places to find recipes is Williams-Sonoma, and once I saw Spaghetti with Stuffed Meatballs, I knew I had to make it. I thought about it for months, never getting around to it, then by the time I decided to take the plunge, I was afraid it was so played up in my mind that it would never live up to my expectations.
