Sitting in Shale Canyon’s tasting room, I had decided the perfect pairing was fois gras with a strawberry balsamic sauce. Tonight the pairing was realized, and it did jot fall short of expectations.

Or fruit. Watermelon salad with feta, serrano pepper, mint, and Hawaiian red salt. Served with shrimp coated in olive oil, curry powder, tomato balsamic vinegar, and of course salt and pepper.
